If there is one small kitchen appliance that most people can’t do without, it’s an electric skillet. These versatile powerhouses can cook everything from steak to lasagna. They are easy to clean, easy to store and a pleasure to cook with. Who doesn’t love a good fried steak with onions? It’s a great meal to prepare when you want a nice plate of comfort food!
Here are some other recipes to cook in an electric skillet:
Combine ¼ flour and ¼ tsp black pepper; coat 4 chicken breasts (each one halved) in the flour mixture. Melt 2 tbsp. butter in skillet and cook chicken until no longer pink; transfer to a platter and cover to keep warm. In skillet add 3 tbsp chopped green onion; cook 1 – 2 mins. Stir in 1/3 cup whipping cream, 3 tbsp white wine (or chicken broth) and 3 tbsp Dijon mustard. Cook for about 2 minutes or until sauce thickens; spoon sauce over chicken. Garnish with thyme sprigs if desired.
Heat 1/3 cup olive oil in skillet; add 4 cloves crushed garlic. Add 1 ½ pounds ripe tomatoes and 1tbsp fresh basil and parsley along with ½ tsp salt. Cook for approx. 5 minutes then transfer to a blender and puree. Return 1 cup of sauce to the skillet and reserve the rest. Meanwhile combine 1 cup ricotta cheese, 1 large egg, 2tbsp parmesan and 3 tbsp basil. Place 2 lasagna noodles into the skillet and layer 1 carrot (peeled into ribbons) and 1 zucchini (also peeled into ribbons) on top. Drizzle with olive oil and salt and pepper. Cover with 2 cups baby spinach and 1/2 cup ricotta cheese. Add one or two pieces of mozzarella cheese if desired. Repeat layers, ending with noodles. Cook for 20-25 minutes, or until noodles are cooked and cheese is melted.
